Yellow tea
The manufacture of yellow tea is a process that is very similar to that of green tea with an additional stage of gently heating the leaves in a damp cloth, allowing them to slightly oxidise through a process of non-enzymic fermentation. Yellow teas are very rare and tend to be similar to green teas in taste, with a mellower and less grassy taste profile.
